While I try to always have a meal plan in place for dinner, there are plenty of nights when 5pm rolls around and there’s no plan for dinner. I do always have a backup plan, though, and it’s my freezer. I’ve come to learn that stocking the freezer with make-ahead meals for busy nights or times you just don’t feel like cooking, and one of the greatest gifts you can give yourself. It means dinner is as easy as pulling something out and reheating it on the stove or in the oven.

Sometimes on the weekend I clear off the C868彩票:kitchen counters, turn up the music, and spend an hour or two prepping some freezer meals. Other times when I’m making a super-easy recipe, I double or sometimes even triple it, then stock the freezer. Either way, putting in some work upfront means I’l have several nights when dinner is already taken care of.
